Sloppy Joe Baked Potato
Sloppy Joe Baked Potatoes are perfectly baked russet potatoes hollowed out and stuffed with a sloppy joe mixture topped with shredded cheese.

Baked Potatoes
- 8 large russet potatoes
- 1 tablespoon canola oil
- 1 teaspoon kosher salt
Sloppy Joe Mixture
- 1 pound ground beef
- ¼ cup chopped onion
- ½ teaspoon garlic powder
- 1 teaspoon yellow mustard
- ¾ cup ketchup
- 1 tablespoon brown sugar
- ½ cup water
- salt and pepper, to taste
Toppings
- 1 cup cheddar cheese, shredded and divided
- ½ cup sour cream
- 2-3 green onions, diced
Baked Potatoes
Wash each potato and pierce a couple of holes on each side with a sharp knife or fork.
Coat each potato with canola oil and salt and bake for 1 hour. (Potatoes should be fork-tender when done.)
Set potatoes aside to cool slightly.
Sloppy Joe Mixture
In a medium skillet over medium heat, cook the ground beef and onions until the beef is no longer pink. Drain.
Stir in the garlic powder, mustard, ketchup, brown sugar, and water, mixing until combined. Add salt and pepper, to taste.
Assembly
Using a sharp knife, slice the top off of each potato.
Remove a scoop of potato out of each one and place it in a small bowl. (You will have a total of about ½ cup potato.)
Mash the scoops of potatoes and add them to the sloppy joe mixture. Mix to combine.
Top the baked potatoes with equal amounts of sloppy joe mixture and shredded cheese. Broil for 1-2 minutes, watching carefully, until the cheese is melted.
Served topped with sour cream and green onion.
