Cream Cheese Mixture
- 8 ounces cream cheese
- 1 teaspoon parsley
- ¼ cup parmesan cheese, grated
- ½ teaspoon kosher salt
Pan-Roasted Tomatoes
- 1 tablespoon olive oil
- 2 packages (10 ounces each) cherry tomatoes, sliced in half lengthwise
- 1 teaspoon kosher salt
- 1 pinch red pepper flakes
- 2 cloves garlic, minced
Toasted French Bread
- 2 loaves (9 inches) French bread, cut half lengthwise and then into 4 to 5-inch sections
- 1 tablespoon olive oil
- ½ teaspoon kosher salt
- ¼ cup balsamic vinegar, for garnish
- basil, chopped for garnish
Roasted Tomatoes
Heat the oil in a large skillet over medium heat.
Once the oil is sizzling, add tomatoes, salt, and red pepper flakes.
Continue cooking, stirring frequently, until tomatoes start to shrivel (about 5 minutes).
Add garlic and cook 1 more minute (or until fragrant).
Remove the tomato mixture from the skillet. Set aside and tent with aluminum foil to keep warm.
Toasted Bread
Brush each piece of bread with olive oil and sprinkle each with salt.
In the same skillet as you roasted the tomatoes, place the pieces of bread cut side down. Cook the bread until browned, pressing lightly into the pan to ensure even cooking.
Remove the bread from the skillet. Top with the cream cheese mixture and roasted tomatoes.
Drizzle balsamic vinegar equally over each slice of bread.
Garnish with chopped basil. Serve immediately.
