- 1 tablespoon unsalted butter
- ½ yellow onion, diced (about ½ cup)
- 1 rib celery, chopped (about ½ cup)
- 2 medium carrots, sliced (about 1 cup)
- 2 teaspoons garlic, minced
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- 1 teaspoon kosher salt
- ¼ teaspoon pepper
- 6 cups (1.44 kg) turkey broth*
- 1½ cups egg noodles**, uncooked
- 2 cups cooked turkey, cubed
In a large pot over medium heat, melt butter.
Cook onion, celery, and carrots in butter until just tender, about 5-8 minutes.
Add in the garlic, thyme, rosemary, salt, and pepper. Cook for about 1 minute.
Pour in turkey broth* and bring to a boil.
Add the noodles. Cook for 8 minutes.**
Add the turkey and continue to boil for 1-2 minutes, or until the turkey is warmed and the noodles are cooked through.
Serve immediately. Salt and pepper to taste.
*You could substitute chicken broth, but it will change the flavor of the soup.
**If you are using my Homemade Egg Noodles, they only need to cook for 3 minutes.
