Turkey Noodle Soup

Ingredients

  • 1 tablespoon unsalted butter
  • ½ yellow onion, diced (about ½ cup)
  • 1 rib celery, chopped (about ½ cup)
  • 2 medium carrots, sliced (about 1 cup)
  • 2 teaspoons garlic, minced
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 teaspoon kosher salt
  • ¼ teaspoon pepper
  • 6 cups (1.44 kg) turkey broth*
  • cups egg noodles**, uncooked
  • 2 cups cooked turkey, cubed

Instructions

  • In a large pot over medium heat, melt butter.
  • Cook onion, celery, and carrots in butter until just tender, about 5-8 minutes.
  • Add in the garlic, thyme, rosemary, salt, and pepper. Cook for about 1 minute.
  • Pour in turkey broth* and bring to a boil.
  • Add the noodles. Cook for 8 minutes.**
  • Add the turkey and continue to boil for 1-2 minutes, or until the turkey is warmed and the noodles are cooked through.
  • Serve immediately. Salt and pepper to taste.

Notes

*You could substitute chicken broth, but it will change the flavor of the soup.
**If you are using my Homemade Egg Noodles, they only need to cook for 3 minutes.
