- ¼ cup (60 g) red wine vinegar
- ¼ cup water
- 3 tablespoons chipotles in adobo, about 1-2 peppers with sauce
- 2 ½ tablespoons honey
- ½ tablespoon kosher salt
- ½ teaspoon black pepper
- ¼ teaspoon dried oregano
- ½ cup (109 g) vegetable oil
To the bowl of a blender, add red wine vinegar, water, chipotles in adobo sauce, honey, salt, pepper, and oregano. Blend until combined.
With the blender on low, slowly drizzle in oil until the mixture emulsifies and comes together. Pour into a container with a lid and chill.
Store the vinaigrette in an airtight container in the refrigerator for up to 5 days.
