- 4 medium yellow onions
- 2 tablespoons unsalted butter
- 3 tablespoons olive oil, divided
- 1 teaspoon kosher salt
- ½ pound ground beef
- 1 ½ teaspoons hamburger seasoning
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- ½ teaspoon Worcestershire sauce
- 1 cup (56.5 g) Gruyere cheese, shredded, divided
Onions
Line a sheet pan with parchment paper.
Cut about ½ inch off the top and bottom of each onion and remove the outer dry papery layer. Use an apple corer to remove the center of the onion.
With clean hands, remove the inside layers, leaving 2 outer layers of the onion intact. Reserve the removed inside layers of the onion.
Place the hollowed onions onto the lined sheet pan, leaving about an inch between each.
Cut the removed inside onion layers into large dice.
To a large skillet over medium-low heat, add the butter and oil. When hot, add the diced onions and salt. Cook, uncovered, for 50-55 minutes, stirring occasionally, until the onions have softened and turned golden brown. While the onions are caramelizing, prepare the hamburger.
Hamburger Mixture
To a large skillet over medium heat, add the ground beef, hamburger seasoning, garlic powder, pepper, and Worcestershire sauce. Cook until the beef is no longer pink (8-10 minutes). Remove from heat and drain.
Mix in ¾ cup of cheese and ½ cup of the caramelized onions.
Assembling and Baking
Preheat the oven to 375°F.
Spoon an equal amount of the beef mixture into the center of each of the hollowed-out onions.
Top with the remaining caramelized onions. The stuffing will be overflowing.
Bake for 35 minutes, or until cooked through and the outer onions are soft.
Remove from the oven. Top the onions with the remaining ¼ cup cheese.
Bake for an additional 10 minutes, or until the cheese is hot and bubbly. Serve.
