Ingredients

  • 4 medium yellow onions
  • 2 tablespoons unsalted butter
  • 3 tablespoons olive oil, divided
  • 1 teaspoon kosher salt
  • ½ pound ground beef
  • 1 ½ teaspoons hamburger seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ½ teaspoon Worcestershire sauce
  • 1 cup (56.5 g) Gruyere cheese, shredded, divided

Instructions

Onions

  • Line a sheet pan with parchment paper.
  • Cut about ½ inch off the top and bottom of each onion and remove the outer dry papery layer. Use an apple corer to remove the center of the onion.
  • With clean hands, remove the inside layers, leaving 2 outer layers of the onion intact. Reserve the removed inside layers of the onion.
  • Place the hollowed onions onto the lined sheet pan, leaving about an inch between each.
  • Cut the removed inside onion layers into large dice.
  • To a large skillet over medium-low heat, add the butter and oil. When hot, add the diced onions and salt. Cook, uncovered, for 50-55 minutes, stirring occasionally, until the onions have softened and turned golden brown. While the onions are caramelizing, prepare the hamburger.

Hamburger Mixture

  • To a large skillet over medium heat, add the ground beef, hamburger seasoning, garlic powder, pepper, and Worcestershire sauce. Cook until the beef is no longer pink (8-10 minutes). Remove from heat and drain.
  • Mix in ¾ cup of cheese and ½ cup of the caramelized onions.

Assembling and Baking

  • Preheat the oven to 375°F.
  • Spoon an equal amount of the beef mixture into the center of each of the hollowed-out onions.
  • Top with the remaining caramelized onions. The stuffing will be overflowing.
  • Bake for 35 minutes, or until cooked through and the outer onions are soft.
  • Remove from the oven. Top the onions with the remaining ¼ cup cheese.
  • Bake for an additional 10 minutes, or until the cheese is hot and bubbly. Serve.
