Peach Glazed Pork Chops

Ingredients

Peaches

  • 2 yellow peaches, pitted, sliced

Peach Glaze

  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • teaspoon black pepper
  • teaspoon red pepper flakes

Pork

  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 4 thick boneless pork chops, 1-1 ½ inches thick, about 2 pounds
  • 2 tablespoons extra virgin olive oil

Instructions

Peach Glaze

  • To a medium bowl, add the glaze ingredients. Mix until incorporated. Set aside while you prepare the pork chops.

Pork

  • Use a paper towel to pat the pork chops dry.
  • Add salt, black pepper, and chili powder to a small bowl. Whisk together to combine.
  • Apply the seasoning mixture evenly to both sides of each pork chop.
  • To a large nonstick skillet over medium heat, add oil. Once hot, add seasoned pork chops. (Depending on the size of the skillet, you may have to work in batches. Do not overcrowd the pan).
  • Cook the pork chops for 7-10 minutes per side, or until browned and the pork reaches an internal temperature of 145°F. (Cooking times may vary, depending on the thickness of the pork chops.)
  • Remove from heat. Transfer the pork to a plate. Tent to keep warm
  • To the same skillet add the peaches. Cook, stirring occasionally, for an additional 3 minutes, or until the peaches have softened.
  • Pour the peach glaze into the skillet with the peaches. Stir to coat the peaches evenly with the glaze, scraping the browned bits from the bottom of the pan as you go.
  • Add the pork chops back to the skillet. Spoon glaze over the top of the pork and cook for 1-2 minutes, or until warmed through. Serve immediately.
