Jalapeno Peach Pork Bites

Ingredients

Peaches

  • 2 yellow peaches, pitted, sliced

Peach Glaze

  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • teaspoon black pepper
  • teaspoon red pepper flakes

Pork

  • 2 tablespoons extra virgin olive oil
  • 4 boneless pork chops, (approximately 2 pounds) cut into 1-inch pieces
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 1 medium jalapeno pepper, thinly sliced
  • fresh parsley, chopped for garnish

Instructions

Peach Glaze

  • To a medium bowl, add the glaze ingredients. Mix until combined. Set aside.

Pork

  • In a medium mixing bowl, combine the pork pieces, salt, pepper, and chili powder. Toss well to ensure the pork pieces are evenly coated with the seasonings.
  • In a large 12 inch skillet, heat oil over medium heat. Once the oil is hot, add the seasoned pork pieces. Sear for 3-5 minutes on all sides until the pork is cooked through and reaches an internal temperature of 145°F (about 13-15 minutes).
  • Remove the pork from the skillet and transfer to a plate. Tent to keep warm.
  • To the same skillet over medium heat, add jalapeno peppers. Cook for 3 minutes. Then, add the peaches with the jalapenos. Cook for an additional 3 minutes, or until the peaches have softened.
  • Pour the prepared peach glaze into the skillet with the peaches. Stir to coat the peaches evenly with the glaze, scraping the browned bits from the bottom of the pan as you go.
  • Return the cooked pork bites to the skillet with the glazed peaches. Spoon the glaze over the pork and cook for an additional 1-2 minutes, or until the pork is heated through.
  • Garnish with parsley. Serve warm.
