Cheesy Roasted Garlic Dip

Garlic
- 3 heads garlic, about 10-12 cloves per head
- 1 tablespoon extra virgin olive oil
Dip
- 1 package (8 ounces) cream cheese, softened
- ¼ cup (58 g) mayonnaise
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 2 cups (226 g) mozzarella cheese, shredded, divided
- 1 cup (113 g) Gruyere cheese, shredded, divided
- ½ cup (50 g) parmesan cheese, shredded, divided
- green onion, chopped for garnish
- crackers and/or crostini, for serving
Garlic
Preheat the oven to 400°F. Set out a 10-inch square of aluminum foil.
Peel away all the loose, papery, outer layers around the heads of garlic. Leave the head itself intact with all the cloves connected.
Trim about ¼ inch off the top of the heads of garlic, exposing the cloves inside.
Place all garlic heads in the center of the sheet of aluminum foil.
Drizzle with olive oil.
Fold the sides of the aluminum foil up to the center and seal (creating a foil packet with the garlic inside). Bake for about 45-50 minutes, or until the garlic cloves are soft and deep golden brown.
Remove the garlic from the oven and carefully open the sealed foil packet to allow the garlic to cool slightly. Set aside. Leave the oven set at 400°F as you prepare the dip.
Dip
Spray an 8-inch baking dish with nonstick cooking spray. Set aside.
When the garlic is cool enough to touch, squeeze out the cloves into a medium bowl. Discard the remaining skin.
Mash with a fork until the garlic forms a paste.
Add cream cheese, mayonnaise, salt, and pepper. Mix well.
In a separate bowl, mix together the mozzarella, Gruyere, and parmesan cheese.
Add two cups of cheese to the garlic mixture. Mix well.
Spread the garlic mixture evenly in the prepared baking dish. Top with remaining cheese blend.
Bake for 20 minutes, or until the cheese is bubbling and golden.
Garnish with green onion. Serve warm with crackers or crostini.
