- 7 medium tomatillos, husked
- 3 medium jalapeno peppers, stems removed
- 2 cloves fresh garlic, peeled
- ½ cup (8 g) fresh cilantro leaves, packed
- ½ cup (80 g) white onion, roughly chopped
- ½ teaspoon kosher salt
- tortilla chips, for serving
To a medium saucepan over medium-high heat, add the tomatillos, jalapenos, and garlic. Cover with water and bring to a boil.
Once boiling, reduce heat to medium. Simmer for 10-15 minutes, or until the tomatillos have softened and turned pale green. Drain the cooked vegetables. Then, transfer them to a food processor.
Add cilantro, onion, and salt. Puree the mixture until you reach your desired consistency.
Serve with tortilla chips.
