Cranberry Salsa

Cranberry Salsa is made with traditional tomato salsa ingredients, but with cranberries and some added sugar in place of the tomatoes.

Ingredients

  • 16 ounces fresh cranberries (about 4 1/2 cups), or frozen (thawed)
  • ½ cup cilantro (can be omitted if you don't like)
  • ¼ cup green onions, chopped
  • ¼ cup granulated sugar
  • 2-3 medium jalapeno peppers, seeded, diced, and chopped
  • 2 medium limes, juiced (about 1/4 cup)
  • ½ teaspoon kosher salt
  • 8 ounces cream cheese, optional
  • crackers, for serving

Instructions

  • Add the cranberries, cilantro, green onion, sugar, jalapenos, lime juice, and kosher salt to a food processor. Blend until it reaches your desired consistency.
  • Pour salsa over a block of cream cheese (optional) and serve with crackers. Refrigerate leftovers.
