- 1 pound fresh green beans, washed with ends trimmed
- 6 tablespoons unsalted butter, divided
- 1 medium yellow onion, diced
- ⅓ cup (31 g) sliced almonds
- 6 teaspoons garlic, minced
- ½ teaspoon kosher salt
- ½ teaspoon pepper
Bring a medium pot of salted water to a rolling boil.
While the water is coming to a boil, wash the green beans and trim both ends.
Add the green beans to the boiling water and cook until tender, about 3 minutes.
To a large bowl, add cold water and plenty of ice for an ice bath.
Transfer the beans to the bowl of ice water. (This will stop the cooking process.)
In a large skillet over medium heat, melt 3 tablespoons of butter. Add the onions and cook until translucent (5-8 minutes).
Add the remaining butter and sliced almonds, cooking another 4-5 minutes, stirring until almonds are golden brown.
Add the garlic and cook an additional minute.
Drain the green beans from the ice bath and add them to the skillet. Toss the beans until coated and cook for about 3 minutes, or until warm. Season with salt and pepper. Serve immediately.
