Green Beans Almondine

Ingredients

  • 1 pound fresh green beans, washed with ends trimmed
  • 6 tablespoons unsalted butter, divided
  • 1 medium yellow onion, diced
  • cup (31 g) sliced almonds
  • 6 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper

Instructions

  • Bring a medium pot of salted water to a rolling boil.
  • While the water is coming to a boil, wash the green beans and trim both ends.
  • Add the green beans to the boiling water and cook until tender, about 3 minutes.
  • To a large bowl, add cold water and plenty of ice for an ice bath.
  • Transfer the beans to the bowl of ice water. (This will stop the cooking process.)
  • In a large skillet over medium heat, melt 3 tablespoons of butter. Add the onions and cook until translucent (5-8 minutes).
  • Add the remaining butter and sliced almonds, cooking another 4-5 minutes, stirring until almonds are golden brown.
  • Add the garlic and cook an additional minute.
  • Drain the green beans from the ice bath and add them to the skillet. Toss the beans until coated and cook for about 3 minutes, or until warm. Season with salt and pepper. Serve immediately.
