- 4 cups cilantro lime rice, divided
- 2 cups romaine lettuce, rinsed and shredded, divided
- 1½ cups fajita veggies, divided
- 1 can (15.25 ounces) black beans, drained and rinsed, divided
- 1 cup Monterrey Jack cheese, divided
- 2 cups chipotle chicken, cubed and divided
- 1 cup pico de gallo, divided
- sour cream, for topping (optional)
- guacamole, for topping (optional)
Set out six bowls. Evenly add rice, lettuce, veggies, beans, cheese, chicken, and pico de gallo to each bowl.
Top with sour cream and guacamole (if using) and enjoy!
