Air Fryer Pulled Pork Egg Rolls

Ingredients

Dipping Sauce

  • ½ cup (116 g) mayonnaise
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon horseradish sauce
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic salt
  • ¼ teaspoon onion powder
  • ¼ teaspoon cayenne pepper

Egg Rolls

  • 12 egg roll wrappers
  • 3 cups pulled pork, shredded, divided
  • ½ cup (140 g) bbq sauce, divided
  • cups (375 g) coleslaw, divided
  • cups (169.5 g) Monterrey jack cheese, shredded, divided
  • water, for wetting edges of wrappers

Instructions

Dipping Sauce

  • In a medium bowl, combine all the dipping sauce ingredients. Mix well. Chill until ready to serve.

Egg Rolls

  • On a clean work surface, set out 12 egg roll wrappers.
  • Top each egg roll wrapper with a heaping tablespoon of coleslaw, ¼ cup of pulled pork, 2 teaspoons of bbq sauce, and a heaping tablespoon of cheese.
  • Use water to wet the edges of the egg roll and then tightly roll the egg roll wrapper around the filling.
  • To roll, first, fold up the bottom corner to just over the filling and roll once, to fold in the pulled pork mixture.
  • Second, fold in the right and left corners of the wrapper to the center, lightly pressing to seal. (You may need to add more water to the edges and corners to help the wrapper stay folded.) It should now look like an open envelope.
  • Continue rolling until the filling is fully wrapped inside of the egg roll. Press to seal the edges.
  • Heat air fryer to 400°F.
  • Place the egg rolls in a single layer into the basket of your air fryer. (Depending on the size of your air fryer, you may have to work in batches.) Spray the tops of the egg rolls with nonstick cooking spray and air fry the egg rolls for 2-3 minutes. Flip them over, spray again with cooking spray, and air fry for another 2-3 minutes, or until golden brown. (4-6 minutes total)
  • Serve the egg rolls with the dipping sauce. Enjoy!
