Country Homestyle Cornbread

Country Cornbread is a country-style cornbread baked in a cast iron skillet for a golden-brown crust, a slightly crumbly texture, and the perfect balance of sweet and savory flavors. Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 cup (122 g) yellow cornmeal
  • 1 cup (125 g) all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 ½ cups (367.5 g) buttermilk, room temperature
  • 2 large eggs, room temperature
  • ½ cup vegetable oil

Instructions

  • Grease a 10-inch oven-safe skillet with oil. Place the skillet into the cold oven. Preheat the oven, with the skillet, to 400°F.
  • To a medium bowl, add cornmeal, flour, baking powder, and salt. Whisk to combine. Set aside.
  • To a small bowl, add buttermilk, eggs, and vegetable oil. Whisk to combine.
  • Add wet ingredients to dry ingredients. Mix until just combined.
  • Carefully transfer the batter to the preheated skillet. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few crumbs but no wet batter.
  • Allow the cornbread to cool in the skillet for a few minutes before slicing and serving. Enjoy!

Notes

Please note this is NOT a sweet cornbread. If you prefer cornbread with a hint of sweetness, I highly recommend this awesome Homemade Cornbread recipe!
