Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 2 carrots, peeled and finely chopped
  • 2 serrano chili peppers, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 15.5-ounce cans black beans, drained and rinsed
  • 1 15.5-ounce can pinto beans, drained and rinsed
  • 1 28-ounce can diced tomatoes
  • 3 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat oil over medium heat in a large heavy-bottomed pot. Once the oil starts to sizzle, add onion, bell pepper, carrots, and serrano pepper. Sauté until soft (about 8-10 minutes).
  2. Add garlic and cook for 1 more minute.
  3. Add tomato paste, tomatoes, beans, and stir to coat.
  4. Add broth, chili powder, cumin, salt, and pepper.
  5. Bring to a boil then reduce heat and simmer for 30-60 minutes.
