Ingredients

  • 1 tablespoon extra virgin olive oil
  • pounds ground Italian sausage
  • 1 red onion, chopped (approximately 1½ cups)
  • 3 garlic cloves, minced (approximately 1½ teaspoons)
  • 1 large carrot, diced (approximately 1 cup)
  • 1 cup celery, diced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 4 cups chicken stock
  • 2 cups heavy cream
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ cup parmesan cheese, shredded
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  • 5 ounces fresh spinach, chopped
  • 1 package (20 ounces) cheese tortellini

Instructions

  • In a large skillet, over medium heat, add oil.
  • Once hot, add ground sausage and cook until browned, breaking it up in the pan as you go (about 5 minutes). Drain grease.
  • Add the sausage to the crockpot and top with onion, garlic, carrots, celery, tomatoes, chicken stock, heavy cream, Italian seasoning, salt, pepper, and parmesan cheese.
  • In a small bowl, mix together cornstarch and water. Mix into the soup. Cook 3-4 hours on low.
  • When ready, add the spinach and the tortellini and cook for 7-8 minutes, or until cooked through and the spinach is wilted. Serve immediately.
