Sloppy Joe Nachos

Sloppy Joe Nachos are a layer of Fritos Scoops corn chips covered in a homemade sloppy joe mixture and topped with cheddar cheese, sour cream, and fresh veggies!

Ingredients

Sloppy Joe

  • 1 pound ground beef
  • ¼ cup chopped onion
  • ½ teaspoon garlic powder
  • 1 teaspoon yellow mustard
  • ¾ cup ketchup
  • 1 tablespoon brown sugar
  • ½ cup water
  • salt and pepper, to taste

Nachos

  • 1 bag (9.25 ounces) Fritos Scoops corn chips
  • 2 cups sharp cheddar cheese, shredded
  • ¼ cup sour cream, optional for topping
  • 2-3 green onions, diced (optional)
  • 1 roma tomato, diced (optional)
  • 1 medium jalapeno pepper, diced (optional)

Instructions

  • Preheat oven to 400°F.

Sloppy Joes

  • In a medium skillet over medium heat, cook the ground beef and onions until the beef is no longer pink. Drain.
  • Stir in the garlic powder, mustard, ketchup, brown sugar, and water, mixing until combined. Add salt and pepper, to taste.

Assembly

  • Place a thin layer of Fritos Scoops on a baking sheet. Top Fritos with sloppy joe mixture and cheese.
  • Place baking sheet in the broiler for 2-3 minutes, or until cheese is melted and bubbly.
  • Top with sour cream, onions, tomatoes, and jalapenos. Serve immediately.
