Copycat Chipotle Steak Quesadilla

A Chipotle Steak Quesadilla is a flour tortilla filled with white cheddar cheese, marinated chipotle steak, and fajita veggies. Then, it is served with a sour cream chipotle dressing! I don't think anyone would know that these did not come from a Chipotle restaurant, they are that good!

  • To a medium skillet over medium heat, add about a tablespoon of oil. Once hot, working one at a time, add a tortilla to the skillet. Top the tortilla, covering it completely, with the following: ½ cup cheese, ⅓ cup steak, and ⅓ cup fajita veggies.
  • Cook for 1-2 minutes, or until golden brown. Using a spatula, fold the tortilla in half. Remove from the skillet and repeat with the remaining quesadillas, adding oil as needed.
  • In a small bowl combine sour cream with 1-2 tablespoons of the chipotle honey vinaigrette. Stir to combine.
  • Serve the sour cream chipotle dressing over the quesadillas and garnish with cilantro. Serve immediately.
