Ingredients & Substitutions

Tortillas: I prefer flour tortillas to use for quesadillas because they are perfect for folding in all that deliciousness. When tortillas are cooked up, you get this amazing combination of a slightly crispy exterior and a tender, chewy interior.

Cheese: In these quesadillas, I used shredded white cheddar cheese. Chipotle restaurants will often use a blend of white cheddar and Monterey Jack cheese, so you could also use a blend of the two as well. Or, use your preferred kind of cheese.

Chipotle Steak: It’s so easy to make your own Chipotle steak. Plus, it’s delicious in more than just these quesadillas, from salads to tacos to burritos! If preferred, I also have chipotle chicken that would make a delicious quesadilla.

Fajita Veggies: Fajita veggies are seasoned green peppers and red onions, sauteed until tender and perfectly cooked. They are also a Chipotle copycat, making this recipe pretty close to the one you would find on their menu.

Chipotle Honey Vinaigrette: The homemade vinaigrette is delicious on its own. But, when combined with sour cream, it gives you a sauce with smoky, sweet, and tangy notes.

Can I Make Steak Quesadillas Ahead Of Time?

Sure! You can definitely get a head start on this recipe. The steak can be made in advance. Store it in the refrigerator for up to 3 days, reheating it when ready to make the quesadillas. The fajita veggies and chipotle honey vinaigrette can also be made ahead of time. Store the cooked fajita veggies in an airtight container in the refrigerator for up to 5 days. The vinaigrette will also last in a sealed container in the refrigerator for up to five days.

How To Store Steak Quesadillas

If you have leftover quesadillas, wrap them individually in aluminum foil or plastic wrap to protect them from drying out and to maintain their shape. Then, place the wrapped quesadillas in an airtight container or sealable plastic bag. This extra layer of protection will help retain their freshness and prevent any odors from seeping in or out. Store the container or bag in the refrigerator for up to 3 days. When ready to enjoy, heat them up in the oven or in a skillet on the stovetop.

Instructions

  • To a medium skillet over medium heat, add about a tablespoon of oil. Once hot, working one at a time, add a tortilla to the skillet. Top the tortilla, covering it completely, with the following: ½ cup cheese, ⅓ cup steak, and ⅓ cup fajita veggies.
  • Cook for 1-2 minutes, or until golden brown. Using a spatula, fold the tortilla in half. Remove from the skillet and repeat with the remaining quesadillas, adding oil as needed.
  • In a small bowl combine sour cream with 1-2 tablespoons of the chipotle honey vinaigrette. Stir to combine.
  • Serve the sour cream chipotle dressing over the quesadillas and garnish with cilantro. Serve immediately.
