Easy Guacamole {Chipotle Copycat} is a Chipotle restaurant-inspired recipe that is made with ripe avocados, lime juice, cilantro, red onion, and jalapeno pepper. Be sure to add it to all of your Copycat Chipotle Chicken recipes next time!
Ingredients & Substitutions
Avocados: Choose a couple of ripe avocados. Avocados are ripe when they are soft, but not mushy, near the top and bottom (not around the center). The peel may also be a bit darker when ripe, but the touch test is your best bet. Another way to check for ripeness is to remove the little stem on top of the avocado. If you see green, the avocado is ready to go. If you see brown, there are probably more brown spots in the avocado. And finally, if the stem is hard to remove, the avocado is not ripe enough to use just yet.
Cilantro: Fresh cilantro is used in this recipe. It’s a flavor that some people love, but some stay away from it altogether. It does make a difference in the flavor of this easy guacamole recipe, so try it before you forget about the recipe altogether. Wash the cilantro well before using it. Remove the leaves and discard the stems. Chop or rip the leaves to the size you prefer.
Onion: The raw red onion gives the guacamole some mild flavor that will enhance as it sits in the guacamole. If preferred, you could use a yellow or white onion.
Jalapeño Pepper: You can adjust the amount of jalapeno added according to your heat preference. I only used half of a jalapeno in this recipe with the seeds removed. The older the pepper the spicier it will be. Looking at a pepper, the older ones will have stress marks, like little white lines or flecks on the flesh. The younger (less spicy) peppers will have clear shiny flesh.
How to Serve Easy Guacamole {Chipotle Copycat}
This is super easy to make and tastes just like the guacamole you would wait in line for at Chipotle restaurants. Dip in some tortilla chips, use it to top off your Chicken Burrito Bowl along with some fresh pico de gallo, or add it to a wrap made with a homemade flour tortilla! How about some fajita veggies and homemade refried beans added to your list of fixings, too? I also have chipotle steak and steak quesadillas that would pair well with the guacamole.
How to Store Guacamole
If you are making easy guacamole ahead of time, there is a way to keep it from turning brown for up to 2 days in advance! Just follow these simple steps for the method I found to work the best:
- Place the guacamole in a bowl that has a tight lid.
- Flatten the top of the guacamole so you have a smooth surface.
- Add a layer of water on top of the guacamole.
- Seal the bowl tightly with the lid.
- Place in the refrigerator.
- When ready to serve, pour off the water that was on top and stir.
- Dip in!

Ingredients
- 2 ripe avocados, peeled, cut in half, pits removed
- 2 teaspoons lime juice
- ¼ teaspoon kosher salt
- 2 tablespoons cilantro, chopped
- ¼ cup red onion, diced (approximately ¼ of an onion)
- ½ medium jalapeno pepper, diced, seeds removed
Instructions
- In a medium bowl, add avocados, lime juice, and salt. Mash until smooth.
- Fold in cilantro, onion, and jalapeño and mix until combined.
- Store in an airtight container in the refrigerator until ready to serve, up to 2 days for best results.
