Chicken Burrito Bowl {Chipotle Copycat}

Chipotle is one of my favorite places to eat. It fills me up, but there is usually a long wait before ordering (it’s popular, for sure). So, make your own Chicken Burrito Bowl instead. The bowls are made with all the ingredients of the burrito but without the extra calories of the tortilla. It’s a delicious way to get your vegetables, beans, and protein.

Burrito Bowl Ingredients

Rice: Just like at Chipotle, I used cilantro lime rice, which you can easily make!

Vegetables: I added shredded romaine lettuce to the bowl, along with fajita veggies. A simple combination of bell peppers and red onions are classic fajita vegetables. Season the veggies with salt and dried oregano and saute them in olive oil for about 15 minutes.

Beans: Canned black beans need to be drained and rinsed well before eating. When you open the can, you will notice a liquid in there that doesn’t look too appetizing. It’s simply a combination of salt and water and the starch from the beans. Rinsing the beans actually does more than just remove that murky substance, it lessens the sodium of the beans. 

Pico de Gallo: Fresh pico de gallo is a perfect addition to this burrito bowl. My avocado corn salsa would also be delicious. In fact, I am going to add them both to my next bowl!

How to Make a Chicken Burrito Bowl {Chipotle Copycat}

Once you have all the parts prepared, it’s super easy to get these bowls filled with all the delicious ingredients. (I also have chipotle steak to use in another delicious bowl!) And, the best part is that these are just as good as leftovers! To make the chicken burrito bowls, first, set out six bowls.

Next, evenly distribute the ingredients into each bowl. You can add the ingredients in any order; as you can see, I didn’t quite follow the exact order of Chipotle restaurants. But, all the goodness gets mixed together anyway, so order them any way you prefer!

Finally, once you have the rice, lettuce, veggies, beans, cheese, chicken, and pico de gallo piled in the bowl, add a little bit of chipotle honey vinaigrette, sour cream, and guacamole. Yum!

Can I Make Burrito Bowls Ahead of Time?

Yes! This would be a wonderful and delicious meal to prep ahead of time and enjoy for a couple of days. The chicken, rice, and fajita veggies can all be cooked and stored in airtight containers in the refrigerator for up to 4 days. Have all the other toppings in containers as well for easy assembly!

A Chicken Burrito Bowl is a bowl filled with rice, chipotle chicken, veggies, black beans, lettuce, cheese, and pico de gallo.

Ingredients

  • 4 cups cilantro lime rice, divided
  • 2 cups romaine lettuce, rinsed and shredded, divided
  • cups fajita veggies, divided
  • 1 can (15.25 ounces) black beans, drained and rinsed, divided
  • 1 cup Monterrey Jack cheese, divided
  • 2 cups chipotle chicken, cubed and divided
  • 1 cup pico de gallo, divided
  • sour cream, for topping (optional)
  • guacamole, for topping (optional)

Instructions

  • Set out six bowls. Evenly add rice, lettuce, veggies, beans, cheese, chicken, and pico de gallo to each bowl.
  • Top with sour cream and guacamole (if using) and enjoy!
