Ingredients

Sloppy Joe

  • 2 pounds ground beef
  • 1 small yellow onion, chopped (about ½ cup)
  • 1 ½ cups (360 g) ketchup
  • 2 teaspoons yellow mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup water

Biscuits

  • 2 ½ cups (312.5 g) all-purpose flour
  • 4 teaspoons baking powder
  • 2 teaspoons kosher salt
  • 2 cups buttermilk
  • ½ cup (1 stick / 113 g) unsalted butter, melted

Topping

  • 1 tablespoon unsalted butter, melted
  • parsley, chopped, for garnish

Instructions

Sloppy Joe

  • Preheat oven to 450°F.
  • To a 13-inch oven-safe skillet over medium heat, add the ground beef and onion. Cook until the beef is no longer pink (8-10 minutes). Drain the excess grease.
  • Stir in the ketchup, mustard, garlic powder, salt, pepper, and water. Mix until well combined. Set aside while you prepare the biscuit layer.

Biscuits

  • In a medium bowl, whisk the flour, baking powder, and salt.
  • Pour in the buttermilk and stir until the batter is mostly combined, being careful not to overwork the batter.
  • Dollop biscuit dough on top of the sloppy joe mixture. Carefully spread the dough to create an even layer.
  • Drizzle the melted butter evenly over the top of the biscuit layer. Bake for 20-25 minutes, or until the biscuits are golden brown and cooked through.
  • Before serving, brush the top of the biscuits with additional melted butter and garnish with parsley. Serve warm.
