- 4 large jalapeño peppers, stems removed, sliced in half, seeded
- 2 tablespoons extra virgin olive oil
- 1 package (8 ounces) cream cheese, softened
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- 16 slices deli ham, divided
- 8 slices Swiss cheese, divided
- 8 slices sourdough bread
- ¼ cup (½ stick / 57 g) unsalted butter, room temperature, divided
- 1 cup (113 g) mild cheddar, finely shredded, divided
Preheat oven to 425°F*. Line a baking sheet with parchment paper.
Brush the jalapeños with the oil on all sides and place on the prepared baking sheet.
Roast the peppers in the oven for about 15 minutes, or until the skin of the jalapeños begins to char slightly.
Remove from oven and set aside to cool slightly.
To a medium mixing bowl, add cream cheese, garlic powder, onion powder, and pepper. Mix well.
Once the jalapenos are cool enough to handle, roughly chop them and fold them into to the cream cheese mixture.
Assembly
Top one slice of bread with ¼ of the cream cheese mixture, 4 slices of ham, and 2 slices of Swiss cheese. Top with a second slice of bread.
Heat a medium skillet over medium heat. Once hot, add ½ tablespoon butter and 2 tablespoons (or enough for a thin layer of cheese to cover the entire piece of bread) shredded cheese. Place the assembled sandwich in the skillet, on top of the butter and cheese.
Cook for 3-4 minutes. Then, using a spatula, lift the sandwich. Before placing it back into the pan, add another ½ tablespoon butter and 2 tablespoons shredded cheese to the skillet.
Cook the other side in the butter and cheese for an additional 3-4 minutes, or until the cheese inside is melted and the outside is golden brown.
Using a spatula, remove the sandwich from the skillet. Repeat with the remaining sandwiches. Serve immediately.
