- 1 tablespoon extra virgin olive oil
- 1 pound ground beef
- 1 large yellow onion, diced (about 1 ½ cups)
- 1 tablespoon garlic, minced
- 1 small green bell pepper, seeded, diced
- 1 small red bell pepper, seeded, diced
- 1 can (15 ounces) diced tomatoes
- 1 can (15 ounces) tomato sauce
- 2 cups (16 ounces) beef broth
- 2 cups water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 1 teaspoon Italian seasoning
- ½ cup (92.5 g) long-grain white rice, uncooked
- parsley, chopped for garnish
To a large pot over medium heat, add oil. Once hot, add ground beef and onions. Cook, breaking the meat up as you go, for 8-10 minutes or until ground beef is fully cooked and no longer pink. Add garlic. Cook for 1 minute.
Add peppers, diced tomatoes, tomato sauce, beef broth, water, Worcestershire sauce, salt, pepper, Italian seasoning, and rice.
Bring to a simmer. Then, reduce heat to low. Cover and cook for 20-25 minutes, or until the rice is cooked through, stirring occasionally.
Garnish with parsley. Serve warm.
