Ingredients & Substitutions

Meat: Ground beef adds some substantial texture to the soup. You could also try using Italian sausage for a slightly spicy profile. Or, try ground turkey for a leaner option.

Bell Peppers: Just like bell peppers are filled and baked in a more traditional stuffed peppers recipe, they are an important part of this soup! I added a red and green bell pepper for color and a slightly sweet, crunchy texture to the soup. You could also experiment with yellow or orange bell peppers.

Tomatoes: Diced tomatoes and tomato sauce are both added to add to the overall taste and texture of the soup.

Broth: Beef broth offers a savory and meaty undertone to the soup. If you don’t have beef broth, you could use vegetable or chicken broth. Beef stock could also be used.

Rice: Uncooked long-grain white rice thickens the soup and is a common ingredient in stuffed peppers. Jasmine or Basmati rice would also be good choices to add. If using brown rice, it often takes longer to cook, so keep that in mind.

To store leftover stuffed pepper soup, first, let it cool completely. Next, store the soup in an airtight container in the refrigerator. I like to store portions of soup for quick grab-and-go lunches! It will last up to 3-4 days. Reheat the soup in the microwave or on the stovetop.

Absolutely! Freezing soup gives it a longer shelf life so none of it goes to waste! To freeze stuffed pepper soup, first, let it cool completely. Next, store it in a freezer-safe container, leaving a little room for expansion. Label and date the packaging and freeze the soup for up to 2-3 months. Let it thaw in the refrigerator before reheating in the microwave or on the stovetop.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 pound ground beef
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 1 tablespoon garlic, minced
  • 1 small green bell pepper, seeded, diced
  • 1 small red bell pepper, seeded, diced
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 2 cups (16 ounces) beef broth
  • 2 cups water
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon Italian seasoning
  • ½ cup (92.5 g) long-grain white rice, uncooked
  • parsley, chopped for garnish

Instructions

  • To a large pot over medium heat, add oil. Once hot, add ground beef and onions. Cook, breaking the meat up as you go, for 8-10 minutes or until ground beef is fully cooked and no longer pink. Add garlic. Cook for 1 minute.
  • Add peppers, diced tomatoes, tomato sauce, beef broth, water, Worcestershire sauce, salt, pepper, Italian seasoning, and rice.
  • Bring to a simmer. Then, reduce heat to low. Cover and cook for 20-25 minutes, or until the rice is cooked through, stirring occasionally.
  • Garnish with parsley. Serve warm.

  1. Excellent! Love her recipes and this one did not disappoint! Easy and delicious. I added some shredded marble cheese at the end (similar to a regular stuffed pepper recipe) and was happy with the result. My husband said it was the best thing he’d had in 3 months 🙂

    I have been making this soup for several years. Identical recipe but I don’t use italian seasoning. Don’t want it to taste like sauce. Just use Thyme. Luv this

    My husband can’t eat green peppers so I used red, yellow and orange peppers. And I cooked the rice separately. It was a huge success and DH requested it again in the near future. Thank you for all your recipes, I haven’t found a dud yet.
