Apple Jalapeño Breakfast Sausage Patties

Ingredients

  • 1 pound ground pork
  • 1 small yellow onion, finely diced (about ½ cup)
  • 2 medium Honeycrisp apples, shredded (no need to peel), squeezed dry (about 1 heaping cup)
  • 2 medium jalapeño peppers, seeded and finely diced
  • 1 tablespoon light brown sugar
  • 1 teaspoon garlic, minced
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • ¼ teaspoon dried marjoram
  • ¼ teaspoon crushed red pepper flakes
  • 2 large eggs, room temperature
  • ¾ cup (94 g) all-purpose flour
  • 2 tablespoons extra virgin olive oil, for cooking

Instructions

  • In a large bowl, combine the ground pork, onion, shredded apple, jalapeños, brown sugar, garlic, salt, pepper, garlic powder, marjoram, red pepper flakes, eggs, and flour. Mix until just combined. Be careful not to overmix, as this can make the patties tough.
  • Place a large piece of parchment paper on a work surface and lightly spray the top with nonstick cooking spray. Add half of the sausage mixture to the center of the parchment.
  • Spray a second piece of parchment paper with nonstick cooking spray. Place it spray-side down over the sausage mixture.
  • Using a rolling pin, roll the sausage mixture between the parchment sheets until it is about ½-inch thick. Remove the top piece of parchment.
  • Use a 3 ½- to 4-inch round cutter or a glass to cut out patties. Gather any scraps, reroll, and cut additional patties as needed. Repeat the process with the remaining sausage mixture. You should get about 12 to 14 patties.
  • Heat the olive oil in a large skillet over medium-low heat. Working in batches, cook the patties for 4 to 5 minutes per side, or until golden brown and the internal temperature reaches 160°F.
  • Serve warm.
