Broccoli Bites
- 1 head broccoli, chopped into florets (about 4 cups)
- 2 large eggs, room temperature
- 1 cup (100 g) parmesan cheese, shredded
- 1 cup (113 g) cheddar cheese, shredded
- 2 teaspoons garlic, minced
- 2 tablespoons all-purpose flour
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
Dipping Sauce
- ½ cup (115 g) sour cream
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon garlic salt
- ⅛ teaspoon cayenne pepper
Broccoli Bites
Add broccoli florets to a large food processor. Process until all large pieces are gone.
Add eggs, parmesan cheese, cheddar cheese, flour, garlic, salt, and pepper. Mix with a spoon.
Scoop out 1 tablespoon and place onto the lined baking sheet. Flatten each scoop with the bottom of a glass.
Bake for 10 minutes and then flip the broccoli bites. Bake for another ten minutes. Serve warm with Dipping Sauce.
Dipping Sauce
While the broccoli bites are baking, make the dipping sauce. In a medium bowl mix sour cream, salt, pepper, garlic, and cayenne pepper. Set in the fridge to chill while you finish cooking the broccoli bites.
