Ingredients

Broccoli Bites

  • 1 head broccoli, chopped into florets (about 4 cups)
  • 2 large eggs, room temperature
  • 1 cup (100 g) parmesan cheese, shredded
  • 1 cup (113 g) cheddar cheese, shredded
  • 2 teaspoons garlic, minced
  • 2 tablespoons all-purpose flour
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper

Dipping Sauce

  • ½ cup (115 g) sour cream
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon garlic salt
  • teaspoon cayenne pepper

Instructions

  • Preheat oven to 425°F. Line a baking sheet with parchment paper. Set aside.

Broccoli Bites

  • Add broccoli florets to a large food processor. Process until all large pieces are gone.
  • Add eggs, parmesan cheese, cheddar cheese, flour, garlic, salt, and pepper. Mix with a spoon.
  • Scoop out 1 tablespoon and place onto the lined baking sheet. Flatten each scoop with the bottom of a glass.
  • Bake for 10 minutes and then flip the broccoli bites. Bake for another ten minutes. Serve warm with Dipping Sauce.

Dipping Sauce

  • While the broccoli bites are baking, make the dipping sauce. In a medium bowl mix sour cream, salt, pepper, garlic, and cayenne pepper. Set in the fridge to chill while you finish cooking the broccoli bites.
