Cheeseburger Pasta Soup

Ingredients

  • 1 pound ground beef
  • 1 large onion, diced
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • ⅛ teaspoon ground mustard
  • 1 can (14.5 ounces) diced tomatoes with green chilis, undrained
  • 4 cups (32 ounces / 960 g) chicken broth, plus more as needed
  • 1 cup (245 g) whole milk
  • 1 ½ cups dry ditalini pasta
  • 1 pound (16 ounces) Velveeta, cubed
  • ½ cup (115 g) sour cream, room temperature
  • Finely diced pickles, for garnish, optional

Instructions

  • In a large pot or Dutch oven over medium-high heat, cook the ground beef and onion with the garlic powder, salt, pepper, Worcestershire sauce, and ground mustard until the beef is no longer pink. Drain any excess grease.
  • Add the diced tomatoes with green chilis, chicken broth, and milk. Bring to a simmer.
  • Stir in the ditalini. Cook for 8 to 10 minutes, stirring often, until the pasta is just tender.
  • Reduce the heat to low. Stir in the Velveeta and sour cream until melted and smooth.
  • The soup will thicken as it sits. If needed, add more broth, ½ cup at a time, until it reaches your desired consistency.
  • Serve topped with finely diced pickles, if desired.
