Ingredients

Chicken

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon Best Chicken Seasoning
  • 2 tablespoons olive oil

Soup

  • ½ yellow onion, finely diced
  • 2 teaspoons garlic, minced
  • ½ teaspoon paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon dried thyme
  • Pinch of cayenne pepper
  • 1 can (14 ounces) creamed corn
  • 1 can (14 ounces) corn kernels, drained, or 2 cups frozen corn
  • 3 cups (24 ounces) chicken stock
  • 3 cups (24 ounces) whole milk
  • 1 teaspoon Worcestershire sauce
  • 1 cup (170 g) orzo, uncooked
  • 1 cup (113 g) sharp cheddar cheese, shredded
  • 2 tablespoons lemon juice, about ½ lemon
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

Chicken

  • Season the chicken evenly with Best Chicken Seasoning.
  • Heat the olive oil in a large pot over medium heat. Add the chicken and cook for 6 to 8 minutes, stirring occasionally, until the chicken reaches an internal temperature of 165°F. Transfer the chicken to a plate and set aside.

Soup

  • In the same pot, add the onion and cook for 2 to 3 minutes, or until softened. Add the garlic, paprika, cumin, thyme, and cayenne pepper. Cook for 30 to 60 seconds, stirring constantly.
  • Add the creamed corn, corn kernels, chicken stock, milk, and Worcestershire sauce. Stir to combine and bring to a gentle simmer.
  • Stir in the orzo. Return the cooked chicken and any juices from the plate to the pot. Simmer for 8 to 10 minutes, stirring occasionally, until the orzo is tender.
  • Reduce the heat to low and stir in the cheddar cheese until melted and creamy.
  • Remove the pot from the heat and stir in the lemon juice. Taste and season with salt and pepper as needed.
  • Garnish with fresh parsley and serve immediately.
