- 1 tablespoon extra virgin olive oil
- 1 ½ pounds ground Italian sausage
- 1 red onion, chopped (approximately 1½ cups)
- 3 garlic cloves, minced (approximately 1½ teaspoons)
- 1 large carrot, diced (approximately 1 cup)
- 1 cup celery, diced
- 1 can (14.5 ounces) diced tomatoes, drained
- 4 cups chicken stock
- 2 cups heavy cream
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ cup parmesan cheese, shredded
- 3 tablespoons cornstarch
- 3 tablespoons water
- 5 ounces fresh spinach, chopped
- 1 package (20 ounces) cheese tortellini
In a large skillet, over medium heat, add oil.
Once hot, add ground sausage and cook until browned, breaking it up in the pan as you go (about 5 minutes). Drain grease.
Add the sausage to the crockpot and top with onion, garlic, carrots, celery, tomatoes, chicken stock, heavy cream, Italian seasoning, salt, pepper, and parmesan cheese.
In a small bowl, mix together cornstarch and water. Mix into the soup. Cook 3-4 hours on low.
When ready, add the spinach and the tortellini and cook for 7-8 minutes, or until cooked through and the spinach is wilted. Serve immediately.
