French Onion Gnocchi

- 1 tablespoon extra virgin olive oil
- 1 tablespoon unsalted butter
- 2 large yellow onions, thinly sliced (about 2 cups)
- ¼ cup (60 g) red wine
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- 1 ½ cups (360 g) beef broth
- 1 tablespoon Worcestershire sauce
- 1 package (16 ounces) potato gnocchi, uncooked
- 1 ½ cups (169.5 g) Gruyère cheese, shredded
- parsley, for garnish
To a large oven-safe, heavy-bottomed skillet over medium heat, add olive oil and butter. Once the butter has melted, add the sliced onions. Sauté for 15-20 minutes, stirring frequently, until the onions are very tender and have a deep caramel color.
Toward the end of cooking the onions, add red wine and continue cooking until the wine has completely evaporated.
Add salt, black pepper, and garlic powder. Stir to combine.
Pour in the beef broth and Worcestershire sauce. Stir to combine. Bring the mixture to a simmer.
Reduce heat to low, then add the gnocchi. Simmer for about 3-5 minutes, stirring occasionally, until the gnocchi are cooked through and tender.
Once the gnocchi are cooked, sprinkle the Gruyère cheese evenly over the top. Place the skillet under the broiler and broil for 2-3 minutes, or until the cheese is melted and lightly browned.
Remove from the oven. Garnish with parsley. Serve.
