French Onion Gnocchi

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 2 large yellow onions, thinly sliced (about 2 cups)
  • ¼ cup (60 g) red wine
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 ½ cups (360 g) beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 package (16 ounces) potato gnocchi, uncooked
  • 1 ½ cups (169.5 g) Gruyère cheese, shredded
  • parsley, for garnish

Instructions

  • To a large oven-safe, heavy-bottomed skillet over medium heat, add olive oil and butter. Once the butter has melted, add the sliced onions. Sauté for 15-20 minutes, stirring frequently, until the onions are very tender and have a deep caramel color.
  • Toward the end of cooking the onions, add red wine and continue cooking until the wine has completely evaporated.
  • Add salt, black pepper, and garlic powder. Stir to combine.
  • Pour in the beef broth and Worcestershire sauce. Stir to combine. Bring the mixture to a simmer.
  • Reduce heat to low, then add the gnocchi. Simmer for about 3-5 minutes, stirring occasionally, until the gnocchi are cooked through and tender.
  • Once the gnocchi are cooked, sprinkle the Gruyère cheese evenly over the top. Place the skillet under the broiler and broil for 2-3 minutes, or until the cheese is melted and lightly browned.
  • Remove from the oven. Garnish with parsley. Serve.
