Garlic Butter Bucatini

Ingredients

  • 12 ounces bucatini pasta
  • 1 tablespoon extra virgin olive oil
  • ½ cup (1 stick / 113 g) unsalted butter
  • 1 medium shallot, diced
  • 2 tablespoons garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup (8 ounces / 240 g) chicken broth
  • 1 cup (238 g) heavy whipping cream
  • 1 cup (100 g) parmesan,* freshly grated
  • 1 tablespoon parsley, chopped for garnish
  • red pepper flakes, for garnish

Instructions

  • Bring a large pot of salted water to a boil. Cook bucatini until al dente, 8-10 minutes. Drain pasta and set aside.
  • To a large skillet over medium heat, add olive oil and butter. Once melted, sauté shallots for 2–3 minutes, or until softened. Add garlic and cook for 1 more minute.
  • Stir in salt and pepper.
  • Pour in the chicken broth and heavy cream and mix well. Bring to a simmer and cook for 5–7 minutes, or until the sauce thickens.
  • Remove from heat and add in parmesan cheese, stirring until fully melted and incorporated.
  • Add the cooked pasta and toss to coat.
  • Garnish with parsley and red pepper flakes. Serve immediately.

Notes

*Freshly grated parmesan makes a big difference in this pasta! It melts smoothly into the sauce, making it creamy and rich. The pre-shredded kind (like you would find in the green container) doesn’t melt as well and can make the sauce grainy.
