Ingredients

  • 2 pounds baby potatoes, washed, halved lengthwise
  • 1 cup (100 g) parmesan cheese, finely grated, divided
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • parsley, chopped, for garnish
  • salt and pepper, to taste

Instructions

  • Preheat oven to 400°F. Line a baking sheet with parchment paper. Set aside.
  • In a large bowl, combine ½ cup of parmesan, oil, garlic, salt, paprika, and pepper. Mix well.
  • Add the potatoes to the bowl with the oil mixture. Toss to evenly coat.
  • Transfer the coated potatoes to the lined baking sheet. Arrange them in a single layer, cut side down. Drizzle any remaining oil mixture over the tops of the potatoes.
  • Roast the potatoes for 40-45 minutes, flipping them halfway through roasting. The potatoes are done when golden brown, crispy on the outside, and fork-tender.
  • Remove the baking sheet from the oven. Sprinkle the remaining parmesan cheese over the hot potatoes.
  • Garnish with parsley. Serve.
