Homemade Chipotle Mayo

This Homemade Chipotle Mayo is creamy, smoky, and just the right amount of spicy with a touch of tangy lime and subtle sweetness. Made with simple ingredients and blended in minutes, it’s a quick flavor booster you can use as a dip, spread, or drizzle for just about anything!

Ingredients

  • 1 cup (220 g) homemade mayonnaise, use your favorite homemade mayo as the creamy base
  • 1 chipotle pepper in adobo*, roughly chopped
  • 2 teaspoons adobo sauce, from the can of chipotle peppers in adobo
  • 1 teaspoon fresh lime juice
  • 1 teaspoon garlic, minced
  • ¼ teaspoon kosher salt
  • 1 teaspoon honey
  • ½ teaspoon paprika

Instructions

  • Add the homemade mayonnaise, chopped chipotle pepper, adobo sauce, lime juice, garlic, salt, honey, and paprika to a wide-mouth jar or blender pitcher.

Immersion Blender Method (easiest)

  • Insert an immersion blender and blend for 10 to 20 seconds, until smooth, creamy, and a vibrant orange color.

Blender Method

  • Blend on low speed, pulsing as needed, until completely smooth. Scrape down the sides once or twice to make sure everything is fully combined.
  • Taste and adjust as needed. Add more chipotle or adobo sauce for extra heat, more lime juice for brightness, or a touch more honey for sweetness.
  • Serve immediately or refrigerate for at least 30 minutes to let the flavors develop.

Notes

*You can add up to 3, depending on how hot you want the mayo.
