- 2 medium (about 12 ounces each) zucchini, sliced into ¾-inch-thick rounds
- 1 teaspoon kosher salt
- 1 tablespoon extra virgin olive oil
- ¼ cup (57.5 g) sour cream
- 1 teaspoon dry ranch seasoning mix
- 1 cup (113 g) sharp cheddar cheese, finely shredded, divided
- 3 slices bacon, cooked, crumbled, divided
- chives, chopped for garnish
- salt, to taste
In a large bowl, combine zucchini and salt. Toss to combine.
Transfer the salted zucchini rounds to a colander for 1 hour. (This allows the excess water to drain off.)
Preheat oven to 475°F and line a large baking sheet with parchment paper. Set aside.
After an hour, pat the zucchini completely dry with paper towels.
Arrange the zucchini in a single layer on the lined baking sheet. Drizzle with olive oil.
Bake for 17-19 minutes, or until browned on the bottom.
Remove the pan from the oven and carefully flip the zucchini. Sprinkle cheese evenly over the zucchini bites. Bake for 3 to 5 minutes, or until the cheese is melted.
While the zucchini is baking, mix the sour cream and dry ranch seasoning in a small bowl.
Top each baked zucchini round with a dollop of the sour cream mixture.
Sprinkle with the crumbled bacon and chopped chives.
Serve immediately.
