Ingredients

  • 2 large sweet potatoes, washed, peeled, cut into ½-inch cubes
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon pure maple syrup
  • 1 teaspoon kosher salt
  • ½ teaspoon chipotle powder
  • ¼ teaspoon black pepper

Instructions

  • Preheat oven to 450°F. Line a baking sheet with parchment paper. Set aside.
  • In a large bowl, combine the olive oil, maple syrup, salt, chipotle powder, and pepper. Add the sweet potatoes and toss until they are evenly coated in the maple-chipotle mixture.
  • Spread the coated sweet potatoes out in an even layer on the lined baking sheet.
  • Bake for 45 minutes, flipping the potatoes halfway through. The sweet potatoes should be golden brown and tender.
  • Broil the potatoes for an additional 2-3 minutes, or until they are crispy on the edges.
