- 2 large sweet potatoes, washed, peeled, cut into ½-inch cubes
- 1 tablespoon extra virgin olive oil
- 1 tablespoon pure maple syrup
- 1 teaspoon kosher salt
- ½ teaspoon chipotle powder
- ¼ teaspoon black pepper
Preheat oven to 450°F. Line a baking sheet with parchment paper. Set aside.
In a large bowl, combine the olive oil, maple syrup, salt, chipotle powder, and pepper. Add the sweet potatoes and toss until they are evenly coated in the maple-chipotle mixture.
Spread the coated sweet potatoes out in an even layer on the lined baking sheet.
Bake for 45 minutes, flipping the potatoes halfway through. The sweet potatoes should be golden brown and tender.
Broil the potatoes for an additional 2-3 minutes, or until they are crispy on the edges.
