Oven Baked BBQ Chicken Thighs

Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 3 tablespoons chicken seasoning
  • ½ cup BBQ sauce, plus extra for serving

Instructions

  • Pat the chicken thighs very dry with paper towels and place them in a large bowl or zip-top bag.
  • Add the olive oil and chicken seasoning. Toss or massage until the chicken is evenly coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  • When ready, preheat oven to 400°F. Line a baking sheet with foil and place a wire rack on top. Spray the wire rack with nonstick cooking spray.
  • Arrange the chicken thighs in a single layer on the rack.
  • Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F.
  • Remove from the oven and brush generously with BBQ sauce.
  • Switch oven to broil on high. Broil for 3 to 5 minutes, watching closely, until the sauce is bubbly and caramelized. For a thicker glaze, brush with additional BBQ sauce halfway through broiling.
  • Let the chicken rest for 5 minutes before serving. Serve with extra BBQ sauce on the side.
