Queso Fundido Skillet

Ingredients

  • 1 pound ground chorizo sausage
  • 1 small yellow onion, diced (about ½ cup)
  • 1 small jalapeno pepper, finely diced
  • 4 cups (452 g) Monterey Jack cheese, shredded

Toppings

  • tomato, diced for garnish
  • jalapeno pepper, diced for garnish
  • cilantro, chopped for garnish
  • warm tortillas, or tortilla chips for serving

Instructions

  • Preheat oven to 400°F.
  • In a large, oven-safe skillet (like cast iron) over medium-high heat, cook the chorizo sausage for 4 minutes, breaking up the meat as you go.
  • Add onion and jalapeno. Continue to cook for 4-6 more minutes, or until the chorizo is cooked through. Discard excess grease. Then, reserve about ¼ cup of the cooked chorizo for topping.
  • Top the cooked chorizo with cheese. Then, top with reserved chorizo.
  • Bake for 10 to 12 minutes, or until the cheese has melted.
  • Top with tomatoes, jalapenos, and cilantro. Serve warm with warm tortillas or tortilla chips.
