- 1 pound ground chorizo sausage
- 1 small yellow onion, diced (about ½ cup)
- 1 small jalapeno pepper, finely diced
- 4 cups (452 g) Monterey Jack cheese, shredded

- tomato, diced for garnish
- jalapeno pepper, diced for garnish
- cilantro, chopped for garnish
- warm tortillas, or tortilla chips for serving
Preheat oven to 400°F.
In a large, oven-safe skillet (like cast iron) over medium-high heat, cook the chorizo sausage for 4 minutes, breaking up the meat as you go.
Add onion and jalapeno. Continue to cook for 4-6 more minutes, or until the chorizo is cooked through. Discard excess grease. Then, reserve about ¼ cup of the cooked chorizo for topping.
Top the cooked chorizo with cheese. Then, top with reserved chorizo.
Bake for 10 to 12 minutes, or until the cheese has melted.
Top with tomatoes, jalapenos, and cilantro. Serve warm with warm tortillas or tortilla chips.
