  • ½ pound ground breakfast sausage
  • 3 large eggs, whisked
  • ¾ cup Monterrey Jack cheese, shredded
  • ¼ cup salsa
  • 20 wonton wrappers
  • 1 tablespoon olive oil
  • ¼ cup sour cream, for dipping
  • ¼ cup salsa, for dipping

  1. Preheat an air fryer to 370°F and spray the basket with nonstick cooking spray.

  2. In a medium skillet over medium-high heat, brown the sausage.

  3. Reduce heat to medium-low and add the whisked eggs and cook until the eggs are done (about 3-5 minutes).

  4. To the sausage and eggs, add the cheese and salsa. Stir to combine.

  5. Divide the sausage and egg mixture equally between each wonton wrapper (about 1 tablespoon each).

  6. Roll up each wrapper (leaving the ends open) and place in the basket of an air fryer in a single layer. Depending on the size of your air fryer, you may have to work in batches.

  7. Brush the oil over the tops of the taquitos. Air fry at 370°F for 5 minutes. Flip over the taquitos and air fry for another 5 minutes.

  8. Remove from the air fryer and serve with sour cream and more salsa, for dipping.
