- ½ pound ground breakfast sausage
- 3 large eggs, whisked
- ¾ cup Monterrey Jack cheese, shredded
- ¼ cup salsa
- 20 wonton wrappers
- 1 tablespoon olive oil
- ¼ cup sour cream, for dipping
- ¼ cup salsa, for dipping
Preheat an air fryer to 370°F and spray the basket with nonstick cooking spray.
In a medium skillet over medium-high heat, brown the sausage.
Reduce heat to medium-low and add the whisked eggs and cook until the eggs are done (about 3-5 minutes).
To the sausage and eggs, add the cheese and salsa. Stir to combine.
Divide the sausage and egg mixture equally between each wonton wrapper (about 1 tablespoon each).
Roll up each wrapper (leaving the ends open) and place in the basket of an air fryer in a single layer. Depending on the size of your air fryer, you may have to work in batches.
Brush the oil over the tops of the taquitos. Air fry at 370°F for 5 minutes. Flip over the taquitos and air fry for another 5 minutes.
Remove from the air fryer and serve with sour cream and more salsa, for dipping.
