Air Fryer Breakfast Taquitos

I use my air fryer all of the time right now, from burritos to pizza rolls to grilled cheese sandwiches, just to name a few! It makes sense to add some breakfast items to that list like these breakfast taquitos (rolled breakfast tacos).

They are easy to make, kid-friendly, and you can even make your own homemade wonton wrappers and breakfast sausage if you feel motivated. But, I will also show you how you can put everything together the night before to save time.

Breakfast Taquitos Ingredients

Breakfast Sausage: Look for ground breakfast pork sausage at your local grocery store. Or, again, you can make your own breakfast sausage to use!

Cheese: I went with Monterey Jack cheese; use your favorite kind of cheese.

Salsa: Choose your favorite salsa to use, from mild to hot, it’s all about your preference. If you buy a jar of salsa, you will have plenty to use for dipping as well.

Wonton Wrappers: You can use round or square wonton wrappers for the taquitos. Or, make your own homemade wonton wrappers.

How to Make Breakfast Taquitos

A taquito is a small, rolled-up taco, usually deep-fried. But, to make these breakfast taquitos a little healthier (but still crispy) I used an air fryer. Before we get them into the air fryer, we have to get them made and assembled!

First, brown the breakfast sausage. After it’s browned, add the whisked eggs to the same skillet you browned the sausage. Cook the eggs until done (3-5 minutes). After the sausage and eggs are cooked, stir in the shredded cheese and salsa. This is the filling for the taquitos.

Use a tablespoon of the sausage and egg mixture to fill each wonton wrapper. Again, you can use square or round wrappers. Roll up each wrapper, leaving the ends open. Place the taquitos in a single layer into the basket of your air fryer and brush the tops with olive oil. 

Making Breakfast Taquitos in an Air Fryer

Air fry the breakfast taquitos for 5 minutes at 370°F. Then, carefully flip them over and air fry for another 5 minutes (no need to brush with more olive oil). Remove the taquitos from the air fryer and serve with sour cream and salsa for dipping. They are also delicious as-is, with no dipping sauce.

Can I Make Breakfast Taquitos Ahead of Time?

Yes! This is one of those recipes that you can put together the night before and pop them in the air fryer in the morning. Simply prepare the sausage and egg mixture, fill and roll the wonton wrappers, and place them in a covered container overnight.

In the morning, or when ready to make the taquitos, simply place them in the basket of the air fryer, brush with oil, and follow the same cooking instructions. 

Dipping Breakfast Taquitos into Salsa

Can I Bake these in the Oven?

Yes! If you don’t have an air fryer (yet), you can make these breakfast taquitos in the oven. Follow the same instructions up to cooking them in the air fryer. Once rolled up, place them on a parchment paper-lined baking sheet. Brush the tops with olive oil and bake for 10 minutes at 400°F.

After 10 minutes, flip over the taquitos and bake for another 10 minutes. They will not be quite as crispy as cooking them in the air fryer, but still delicious!

I have tested 3 brands in my home and I recommend the Ninja Air Fryer. (affiliate link) You can go up a size if needed, but it is superior in achieving consistent results and also ease of use. I’ve been very happy with this Air Fryer!

Air Fryer Breakfast Taquitos are wonton wrappers filled with breakfast sausage, eggs, cheese, and salsa, cooked in an air fryer.

Ingredients

  • ½ pound ground breakfast sausage
  • 3 large eggs, whisked
  • ¾ cup Monterrey Jack cheese, shredded
  • ¼ cup salsa
  • 20 wonton wrappers
  • 1 tablespoon olive oil
  • ¼ cup sour cream, for dipping
  • ¼ cup salsa, for dipping

Instructions

  • Preheat an air fryer to 370°F and spray the basket with nonstick cooking spray.
  • In a medium skillet over medium-high heat, brown the sausage.
  • Reduce heat to medium-low and add the whisked eggs and cook until the eggs are done (about 3-5 minutes).
  • To the sausage and eggs, add the cheese and salsa. Stir to combine.
  • Divide the sausage and egg mixture equally between each wonton wrapper (about 1 tablespoon each).
  • Roll up each wrapper (leaving the ends open) and place in the basket of an air fryer in a single layer. Depending on the size of your air fryer, you may have to work in batches.
  • Brush the oil over the tops of the taquitos. Air fry at 370°F for 5 minutes. Flip over the taquitos and air fry for another 5 minutes.
  • Remove from the air fryer and serve with sour cream and more salsa, for dipping.
