Cream Cheese Mixture

  • 8 ounces cream cheese
  • 1 teaspoon parsley
  • ¼ cup parmesan cheese, grated
  • ½ teaspoon kosher salt

Pan-Roasted Tomatoes

  • 1 tablespoon olive oil
  • 2 packages (10 ounces each) cherry tomatoes, sliced in half lengthwise
  • 1 teaspoon kosher salt
  • 1 pinch red pepper flakes
  • 2 cloves garlic, minced

Toasted French Bread

  • 2 loaves (9 inches) French bread, cut half lengthwise and then into 4 to 5-inch sections
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ cup balsamic vinegar, for garnish
  • basil, chopped for garnish


Cream Cheese Mixture

  • In a medium bowl combine cream cheese, parsley, parmesan, and salt. Set aside.

Roasted Tomatoes

  • Heat the oil in a large skillet over medium heat.
  • Once the oil is sizzling, add tomatoes, salt, and red pepper flakes.
  • Continue cooking, stirring frequently, until tomatoes start to shrivel (about 5 minutes).
  • Add garlic and cook 1 more minute (or until fragrant).
  • Remove the tomato mixture from the skillet. Set aside and tent with aluminum foil to keep warm.

Toasted Bread

  • Brush each piece of bread with olive oil and sprinkle each with salt.
  • In the same skillet as you roasted the tomatoes, place the pieces of bread cut side down. Cook the bread until browned, pressing lightly into the pan to ensure even cooking.
  • Remove the bread from the skillet. Top with the cream cheese mixture and roasted tomatoes.
  • Drizzle balsamic vinegar equally over each slice of bread.
  • Garnish with chopped basil. Serve immediately.
