- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes (about 2 chicken breasts)
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- ⅛ teaspoon cayenne pepper
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter, cubed
- freshly chopped parsley, for garnish (optional)
Preheat the oven to 425°F.
Place the cubed chicken into the bottom of a 9x13-inch baking dish.
In a small bowl, mix together the Italian seasoning, salt, garlic powder, onion powder, paprika, black pepper, and cayenne pepper.
Sprinkle the seasoning mix over the chicken.
Add the olive oil and mix all the ingredients together until the chicken pieces are coated in the seasonings.
Top the chicken with the butter cubes.
Bake for 10 minutes. After ten minutes, stir the chicken and bake for an additional 8-10 minutes. The chicken is fully cooked when the internal temperature reaches 165°F.
Remove the chicken from the oven and sprinkle with fresh parsley, if using.
