  • 2 tablespoons extra-virgin olive oil
  • 1 pound chuck beef cut into cubes
  • 1/4 cup flour
  • 2 stalks celery chopped
  • 3 large carrots chopped
  • 1/2 cup frozen peas
  • 5 yukon gold potatoes cut into bite-sized cubes
  • 1 red bell pepper seeded and diced
  • 1 yellow onion chopped
  • 2 cloves garlic minced
  • 2 bay leaves
  • 2 teaspoons dried thyme
  • 1/4 cup fresh parsley leaves chopped
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • 2 1/2 cups low-sodium beef broth
  • 1/2 cup red wine


  1. Heat oil in a cast iron skillet over medium-high heat.
  2. Coat the beef with the flour and brown in the hot skillet.
  3. Add the browned beef to the slow cooker along with the remaining ingredients.
  4. Cook on low for 8 hours. Remove the bay leaves and season with more salt and pepper if needed.
