  • 2 pounds spicy Italian sausage
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 tablespoons butter, cold and grated
  • 3 tablespoons parsley, chopped
  • ½ teaspoon garlic salt
  • ½ teaspoon pepper
  • 4 cups grated cheddar cheese
  • ½ cup grated mozzarella cheese


  1. Preheat oven to 350°F.
  2. In a large bowl, sift flour, baking powder, and salt.
  3. Cut in grated butter until evenly combined.
  4. In the same bowl, add the sausage, parsley, garlic salt, pepper, grated cheddar, and mozzarella.
  5. Form the mixture into 1 inch balls and place on a rimmed prepared baking sheet.
  6. Bake for 20-25 minutes or until sausage is cooked through.
