  • 1 tablespoon extra virgin olive oil
  • 1/2 white onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 pound Italian sausage
  • 1 can (6 ounces) tomato paste
  • 1 can (14.5 ounces) petite diced tomatoes
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • 1/4 teaspoon fresh cracked black pepper
  • 1/2 cup cream cheese
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup parmesan cheese


  1. In a large pan over medium heat, add olive oil to the pan over medium heat and add onions, and cook until slightly soft.

  2. Add garlic and cook for an additional 1 minute.

  3. Add sausage meat, break up with a spatula, and cook until it’s no longer pink, stirring frequently.
  4. Add the tomato paste, diced tomatoes, Italian seasoning, salt, pepper, cream cheese, and chicken broth.
  5. Stir in heavy cream and Parmesan cheese to the sausage soup.
  6. Cover with a lid and reduce heat to low, allowing the mixture to simmer for 5 minutes.

  7. Garnish with fresh chopped parsley and more parmesan.
