Ingredients

Broccoli Bites

  • 1 head (about 4 cups) broccoli, chopped into florets
  • 2 large eggs, room temperature
  • 1 cup Parmesan cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 2 teaspoons garlic, minced
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon black pepper

Dipping Sauce

  • 1/2 cup sour cream
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon cayenne pepper

Instructions

  • Preheat oven to 425°F

Broccoli Bites

  • Add broccoli florets to a large food processor, process until all large pieces are gone.
  • Add eggs, parmesan cheese, cheddar cheese, flour, garlic, salt, and pepper. Mix with a spoon.
  • Scoop out 1 tablespoon and place on a parchment-lined baking sheet. Flatten each scoop with the bottom of a glass.
  • Bake for 10 minutes and then flip the broccoli bites. Bake for another ten minutes. Serve warm with Dipping Sauce.

Dipping Sauce

  • While the broccoli bites are baking, make the dipping sauce. In a medium bowl mix sour cream, salt, pepper, garlic, and cayenne pepper. Set in the fridge to chill while you finish cooking the broccoli bites.
