- 4 medium russet potatoes
- 1 tablespoon olive oil
- ½ teaspoon kosher salt
Rinse and scrub the potatoes under cold water.
Use a mandoline to cut potatoes into thin, even slices.
Transfer the potato slices to a large bowl, cover with ice water, and let the potatoes soak for about 30 minutes.
While the potatoes are soaking, preheat the oven to 450°F and line a baking sheet with parchment paper. Set aside.
When ready, drain the water and pat the potatoes dry.
Add 1 tablespoon of oil to the bowl and toss to coat.
Sprinkle with kosher salt.
Place the potatoes in a single layer on the lined baking sheet.
Bake for 30-35 minutes. Store in an airtight container.
