Homemade Potato Chips are crispy chips made with russet potatoes, seasoned with a little salt, and baked in the oven for a healthier potato chip.

  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt


  1. Rinse and scrub the potatoes under cold water.

  2. Use a mandoline to cut potatoes into thin, even slices.

  3. Transfer the potato slices to a large bowl, cover with ice water, and let the potatoes soak for about 30 minutes.

  4. While the potatoes are soaking, preheat the oven to 450°F and line a baking sheet with parchment paper. Set aside.

  5. When ready, drain the water and pat the potatoes dry.

  6. Add 1 tablespoon of oil to the bowl and toss to coat.
  7. Sprinkle with kosher salt.
  8. Place the potatoes in a single layer on the lined baking sheet.

  9. Bake for 30-35 minutes. Store in an airtight container.
