Stovetop Apple Butter

This Stovetop Apple Butter is rich, cozy, and packed with sweet apple flavor and warm spices. It cooks down into a smooth, thick spread that is perfect on toast, biscuits, pancakes, and so much more.

Ingredients

  • 5 ½ pounds tart and sweet apples, such as Granny Smith and Honeycrisp
  • 1 ½ cups (300 g) light brown sugar, packed
  • ½ cup apple cider, or apple juice
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon kosher salt

Instructions

  • Core and roughly chop the apples. Peeling is optional; leaving the skins on adds flavor and natural pectin.
  • Add the apples, brown sugar, apple cider, apple cider vinegar, cinnamon, allspice, and salt to a large, heavy-bottomed pot or Dutch oven. Stir to combine. Bring to a simmer over medium heat, then cover and cook for 25 to 35 minutes, stirring occasionally, until the apples are very soft and falling apart.
  • Remove the pot from the heat. Use an immersion blender to puree the apples until completely smooth. You can also carefully transfer the mixture to a blender in batches and puree.
  • Return the pot to the stove and cook the apple butter uncovered over medium-low heat, stirring frequently, until it is deep brown and thick. This can take 45 to 75 minutes, depending on the moisture in the apples. If you notice any small chunks of apple while it cooks, use the immersion blender again to blend until smooth. Be careful, as the apple butter will be very hot. It is ready when a spoon dragged across the bottom of the pot leaves a clear trail that doesn't immediately fill in.
  • Remove from the heat.
  • Let the apple butter cool slightly, then transfer it to clean jars or airtight containers.
