Ingredients
Sweet Potatoes
5-6mediumsweet potatoes,washed
3largeeggs,room temperature
2tablespoonslight brown sugar,packed
1teaspoonvanilla extract
½teaspoonkosher salt
½teaspoonpepper
¼teaspoonground nutmeg
¼teaspoonground cinnamon
⅛teaspooncayenne pepper
Streusel Topping
1cup(125 g) all-purpose flour
½cup(100 g) light brown sugar,packed
½teaspoonground cinnamon
½teaspoonkosher salt
1cup(109 g) pecans,roughly chopped, divided
½cup(1 stick / 113 g) unsalted butter,melted
Instructions
Sweet Potatoes
Preheat oven to 375°F. Line a large baking sheet with parchment paper. Set aside.
Using a fork, prick the sweet potato a few times on each side. Place sweet potatoes on the lined baking sheet. Bake until fork-tender (about 70-80 minutes). Depending on the size of the sweet potatoes, cooking times may vary.
Allow the potatoes to cool for 15-20 minutes, or until they are cool enough to handle.
When cool enough, use a sharp knife to cut each potato in half, horizontally. Scoop out the insides of each sweet potato, discarding the skins. Place the cooked sweet potatoes into the bowl of a food processor (about 4½ cups potatoes).
Add eggs, brown sugar, vanilla, salt, pepper, nutmeg, cinnamon, and cayenne. Blend until smooth. (You could also use a hand mixer or a blender.)
Spray an 11x7-inch* baking dish with cooking spray. Pour the potato mixture into the prepared baking dish. Set aside while you prepare the streusel topping.
Streusel Topping
In a medium bowl, whisk together the flour, brown sugar, cinnamon, salt, and ¾ cup of pecans.
Add the melted butter to the flour mixture. Mix with a fork until the mixture is combined.
Top the sweet potato mixture with the streusel topping. Sprinkle the remaining pecans evenly over the top of the entire dish. Bake for 25-30 minutes, or until golden brown.
