Ingredients

  • 16 ounces spring mix salad blend, about 6 cups
  • 2 ripe pears, thinly sliced
  • 2 cups (234 g) walnut halves, roughly chopped
  • 1 small shallot, thinly sliced
  • 1 cup (100 g) dried cranberries
  • 1 container (4 ounces) feta cheese, crumbled

Dressing

  • cup (72 g) extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  • Add the spring mix to a large salad bowl. Arrange pears, walnuts, shallots, cranberries, and feta over the top.
  • In a small mixing bowl or glass measuring cup, whisk together olive oil, apple cider vinegar, honey, mustard, salt, and pepper until fully combined.
  • Drizzle the dressing over the salad just before serving.
  • Use salad tongs to gently toss until everything is evenly coated. Serve immediately.
