- 16 ounces spring mix salad blend, about 6 cups
- 2 ripe pears, thinly sliced
- 2 cups (234 g) walnut halves, roughly chopped
- 1 small shallot, thinly sliced
- 1 cup (100 g) dried cranberries
- 1 container (4 ounces) feta cheese, crumbled
Dressing
- ⅓ cup (72 g) extra virgin olive oil
- 3 tablespoons apple cider vinegar
- 3 tablespoons honey
- 2 tablespoons Dijon mustard
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Add the spring mix to a large salad bowl. Arrange pears, walnuts, shallots, cranberries, and feta over the top.
In a small mixing bowl or glass measuring cup, whisk together olive oil, apple cider vinegar, honey, mustard, salt, and pepper until fully combined.
Drizzle the dressing over the salad just before serving.
Use salad tongs to gently toss until everything is evenly coated. Serve immediately.
